World’s Best Restaurant 2024
By Bea Pineda 🌸🌸🌸
Over the years, Central's evolution has been nothing short of remarkable. What began as a mere concept has blossomed into a culinary journey that intricately weaves through the diverse ecosystems of Peru. At its heart lies a menu meticulously crafted to guide diners through the country's varied landscapes, categorized by altitude – from the depths of the Pacific Ocean to the lofty peaks of the Andes. Each dish serves as a homage to its origins, drawing upon the rich bounty of ingredients sourced from regions like the Dry Valley with its succulent shrimp, loche squash, and creamy avocado, or the Amazonian Water teeming with pacu fish, refreshing watermelon, and invigorating coca leaf.
In 2018, Virgilio MartÃnez and PÃa León, the creative forces behind Central, made a significant move, relocating their culinary sanctuary to Casa Tupac nestled in Lima's vibrant Barranco neighborhood. This sprawling establishment not only houses the restaurant but also boasts a spacious garden, an innovative research center, León's solo venture Kjolle, and serves as the intimate abode of the couple and their family. It's a space where flavors come alive, and hospitality takes on a deeply thoughtful dimension.
Central's ascent to culinary stardom was marked by its debut on The World's 50 Best Restaurants list in 2013, capturing the 50th spot as its influence across Latin America continued to burgeon. A decade later, a historic moment unfolded as Central clinched the title of The World's Best Restaurant, a feat unprecedented for a South American establishment, proudly sponsored by S.Pellegrino & Acqua Panna.
Virgilio MartÃnez and PÃa León have not only revolutionized Peruvian cuisine but have also emerged as global ambassadors of its vibrant flavors. Their gastronomic empire has expanded with a series of acclaimed openings, each a testament to their unwavering commitment to showcasing Peru's culinary heritage. First came Mil, perched high in the mountains near Cusco, offering a dining experience immersed in the breathtaking natural beauty of the Andean region. This was followed by Maz in Tokyo, where the essence of Peruvian cuisine found resonance amidst the bustling streets of Japan's capital. Yet, their vision knows no bounds as they continually seek new horizons, always striving to blend Peruvian ingredients with local produce to create truly unique culinary experiences that transcend borders.
In essence, Central's journey transcends the confines of a mere restaurant. It is a celebration of Peru's rich biodiversity, a testament to the passion and creativity of its visionary chefs, and a beacon of inspiration for gastronomes around the globe. As MartÃnez and León continue to chart new territories and push the boundaries of culinary innovation, one thing remains certain – their legacy will endure, leaving an indelible mark on the world of gastronomy for generations to come.
